Being raised in a large Italian family,
food was always the center of every gathering. Especially considering the majority of my family members are chefs who own restaurants. They weren’t Michelin star chefs, they were hard working people who made great food.
Summers growing up were spent in Positano, Italy. A place I call my second home. A place where stress seemed to vanish and all that was left were life’s simple pleasures. Here is where I truly fell in love with food; how all you need are just a few ingredients, and as long as they were fresh, the food will taste amazing. My father took this concept and opened La Cambusa when I was in middle school. It wasn’t long before I spent my weekends working there. Over the next 15 years, I would learn all the ins and outs of the business. Mastering both the front and the back of house.
Eleven years ago, my brother and I, along with our father opened La Cambusa in Garfield, NJ. We built a loyal following based on the idea of making food from scratch using the best ingredients available. I enrolled into culinary school to expand my knowledge of cooking, combining simplistic ingredients with classical techniques. I’ve been hired as a culinary consultant to teach high school students the style of cooking I come to love with hopes that one day they will find their way within the kitchen and adapt a style of their own.
Today, I've chosen to step away from the hectic pace of a restaurant. I’ve chosen to follow my dream. To cook for people on a more personal level and share my love for food with you.
